Resep Wadai Ipau/Kue Ipau Gurih & Enak Khas Banjar Traditional Savory Pancakes

Ceritanya saya penasaran kepingin mencoba  hidangan khas dari wilayah tengah ataupun timur Indonesia. Buka facebook dan posting deh pertanyaan di salah satu grup kuliner mengenai hidangan khas daerah tersebut. Dari beberapa saran yang diberikan, saya putuskan untuk mencoba membuat yang satu ini, mille crêpesnya orang Banjar haha, wadai ipau alias kue ipau Banjar alias kue peta Asia.    I was curious about some traditional treats from central and eastern part of Indonesia.  After posting a question in a cooking group, I got a few suggestions and decided to try to make this one, Borneo's layered savory pancakes called as Wadai Ipau. Unexpectedly, it tastes really good!

Wadai Ipau/Kue Ipau Banjar

Bahan Pancake
Pancake Ingredients 
  • 1 cup (120 gr) terigu serba guna   all purpose flour
  • 1 telur utuh, kocok lepas   egg, whisk
  • 2 sdm minyak nabati   2 Tbsp vegetable oil
  • ½ C (120ml) susu   milk
  • ½ sdt garam   ½tsp salt

Cara membuat pancakenya   Instructions:
campur semua bahan, dadar jadi beberapa lembar kue dadar (pancake). Simpan.     Mix all the ingredients and make some pancakes, set aside.

Bahan Isian   Filling:
  • 3 sdm minyak nabati, 3 Tbsp vegetable oil
  • 1 bawang bombay, iris tipis     onion, slice thinly
  • 3 siung bawang merah, iris tipis    shallots, slice thinly 
  • 2 siung bawang putih, iris tipis    garlic cloves, slice  thinly
  • 60gr (2.5 oz) wortel, parut   carrot, grated or shredded
  • 1 buah tomat, buang bijinya lalu iris   tomato, remove the seeds, slice
  • ½  cup (100 gr) kornet sapi atau daging lainnya   corned or ground beef or any kind of meat of your preference 
  • gula, garam, merica secukupnya   salt, sugar, & pepper to taste 
  • ¼  cup (60ml) santan kental  thick coconut milk
Cara membuat isian   Instructions:
  1. Tumis bebawangan sampai harum, masukkan wortel, aduk rata.   Stir-fry onion, garlic, and shallots until fragrant, stir in carrots.
  2. Masukkan kornet dan semua bahan lain, aduk sampai matang.    Stir in corned beef and other ingredients, stir well until cooked.
Saus Gurih  Coconut Milk Gravy:
  • ½ cup (120ml) santan sedang   coconut milk
  • sedikit garam    dash of salt
  • 1 sdm mayonnaise 1 Tbsp mayonnaise
  • 1 sdm saus cabai    1 Tbsp hot chilli sauce
Cara membuat saus    Instruction:
Campur semua bahan, aduk rata sampai masak dan mengenral.    Mix all ingredients and bring into simmer, stirring constantly.

Penyelesaian   Finishing:
  1. Ambil selembar dadar, beri isian, ratakan (bisa ditaburi keju jika suka). Ambil selembar dadar lagi dan ulangi tahapan ini sampai lembar dadar terakhir.     Line a pancake in a pan/glass bowl. Spread some filling on it, top with cheese if desired, line another pancake on top of it and repeat this step until the very last piece of pancake.
  2. Siram bagian paling atas dengan 4 sdm santan kental.  Drench the top layer with 4Tbsp of coconut milk.
  3. Siapkan kukusan. Tunggu sampai air dalam kukusan benar-benar mendidih, barulah masukkan wadah berisi wadai ipau, kukus selama 30 menit di api kecil atau sampai ipaunya matang. Prepare the steamer.  Let the water boil and makes it super steamy, steambake wadai ipau for 30 minutes over low heat until done.
  4. Angkat, potong-potong, sajikan dengan sausnya dan taburan bawang goreng.    Serve with the coconut milk gravy and some fried shallots
