Midnight Donut

Let's start this post with what's behind the name. I'm going to make a confession here and hopefully at least one of you who read this post can say something like "oh... I know that feeling", or maybe "that sounds just like me". Just like it's name, midnight donut was literally donuts that I made around midnight because that so very night, I all of a sudden had this crazy torturing craving for donuts. I tried my best to wait until at least the morning comes but I just couldn't help it anymore, I wanted to munch some donuts!

Ingredients:
  • 1 cup bread flour
  • 2 Tbsp cornstarch
  • 1 tsp instant dry yeast
  • 1/4 cup caster sugar
  • 1/4 tsp salt
  • 1/2 tsp milk vanilla powder
  • 1/2 cup lukewarm water, use as necessary
  • 1 Tbsp butter
  • 2 Tbsp vegetable oil

Instructions:
  1. In a huge bowl or a stand mixer bowl, mix all dry ingredients. Don't forget to sift the bread flour and cornstarch first. 
  2. Pour lukewarm water gradually into the bowl and start mixing using wooden spoon until you get a sticky but not too watery dough (stop pouring the water when it starts to look moist enough). If you use an electric mixer then simply turn it on and beat the ingredients at low speed. 
  3. Add in butter and continue mixing
  4. Smear all over your hands with oil and start kneading the dough manually with your hands until soft, smooth, non-sticky dough formed. 
  5. Shape the dough like a ball and let rest covered in a warm place until rising and double in size
  6. Punch the dough to release the air and lightly dust the dough with flour, knead for a little bit (just around 1 or 2 minutes).
  7. Roll the dough flat around half inch thick and cut using donut cutter. 
  8. Let all donuts rest covered until almost double in size (remember  I say almost, so try to not overproof them).
  9. Prepare your frying pan, pour just enough oil and fry those donuts.  Remember to only flip them once during frying process. 
  10. Let the donuts cool and top as desired

There you go... fluffy and soft homemade donuts.
