Coco Choco Muffin

Tinggal campur & aduk sebentar, cocok untuk yang baru belajar baking. Bisa untuk sarapan, lunch snack untuk si kiddo, atau teman minum kopi. Hmmm gurihnya santan (COCOnut milk) bertemu manisnya coklat (CHOCOlate), jadilah COCOCHOCO MUFFIN! So easy & absolutely yummy!



 CocoChoco Muffin

Bahan Kering:
  • 1 Cup (140gr) tepung serba guna
  • 1 sdt baking powder
  • 1/3 Cup (75gr) gula pasir
Campur rata, buat sumur di tengah:
Bahan Basah:
  • 1 butir telur, kocok lepas
  • garam secukupnya
  • 1/4 C santan instant (60ml)
  • 1/4 C air matang (60ml)
  • 1/3 C minyak (80ml)
Kocok rata, tuang ke bahan kering.
Tambahan:
  • 2 sdt cocoa
  • Dark Cooking Chocolate secukupnya, potong dadu
Cara membuat:
  • Tuang bahan cair ke tepung. Aduk sebentar sekedar tercampur saja.
  • Ambil 1/4 bagian, beri cacao.
  • Tuang adonan putih sampai 2/3 tinggi loyang, benamkan DCC. Tutup dengan 1 sdm adonan coklat, beri DCC.
  • Panggang di 180°C (api sedang)12 menit, turunkan ke 120°C (api kecil) 8 menit.

The time has come for creamy coconut milk to meet sweet chocolate. Both of them create a totally amazing flavor in this muffin recipe. If you're pretty new in baking, this recipe is a must try. It's really easy & quick, but when it comes about the taste... it's so d*mn good!

CocoChoco Muffin

Mix, make a well in the middle:
  • 1 C all purpose flour (120gr)
  • 1 tsp baking powder
  • 1/3 C caster sugar (75gr)
mix and whisk:
  • 1 egg
  • dash of salt
  • 1/4 C coconut milk (120ml)
  • 1/3 C vegetable oil (80ml)
Additional ingredients:
  • 2 tsp cocoa
  • 3.5 oz Dark Cooking Chocolate, diced
Instructions:
  • Pour liquid ingredients into flour, mix using a wooden spoon just until lumpy (don't overmix!).
  • Take 1/4 of the batter and mix it with cocoa.
  • Fill lined muffin tray with white batter just around 2/3rd of the height. Put some diced chocolate, cover with 1 T of chocolate batter.
  • Bake in a preheated oven at 350°F (180°C) for 10 minutes, lower the temperature to 250°F (120°C) and continue baking for another 8 minutes.
