Lemon Marshmallows

Di resep marshmallow yang sudah pernah saya berikan, ada susu sebagai bahannya. Kali ini saya membuat marshmallow dengan sensasi rasa asam manis, tanpa susu. Bahan-bahannya sederhana dan cara membuatnya sangat mudah! Seperti biasa, harap baca dengan teliti sampai selesai ya sebelum bertanya.    This marshmallow recipe is practically the same as the one I've shared before, I just reduce the sugar amount and change the milk with lemon juice to get sweet and sour lemon flavor I love. 

Seperti biasa, saya tidak menggunakan sirup jagung dalam proses pembuatannya sehingga Anda tidak akan kesulitan untuk mengikuti resep ini.      I don't use corn syrup in my recipe to make it easier for people who live in a place where corn syrup is difficult to get.

Lemon Marshmallows

Bahan-bahan    Ingredients:
  • 14gr (.5 oz) gelatin bubuk   gelatine powder 
  • ½ cup (120ml) air suhu ruang   room temperature water
  • ⅔ cup (150gr) gula pasir    white granulated sugar
  • ½ cup (120ml) air suhu ruang    room temperature water
  • sedikit garam     dash of salt
  • 1 sdt ekstrak vanila   1 tsp vanilla extract 
  • ¼ cup (60 ml) perasan lemon  freshly squeezed lemon juice 
Taburan   Dusting:
• gula halus dicampur dengan pati jagung sampai jadi 100gr    around 3.7oz of confectioners sugar + cornstarch mixture 


Cara membuat   Instructions:
  • Taburkan gelatin bubuk di permukaan air, diamkan hingga larut.   Dissolve gelatine in water, set aside.
  • Campur gula, air, garam, & vanilla extract, jerang di api kecil sampai gula larut.   Mix sugar, water, salt, & vanilla extract, bring into simmer and stir until the sugar is completely dissolved
  • Tuang larutan gelatin, aduk sampai berbuih-buih. Angkat, biarkan uapnya hilang (diamkan sekitar 5 menit), beri sari lemon.    Add  gelatine mixture into that syrup and stir until it looks super bubbly. Turn the stove off , let rest for 5 minutes, add lemon juice in.
  • Kocok menggunakan mixer dengan kecepatan bertahap dari rendah ke tinggi sampai adonan kaku  (stiff peak).    Beat with electric mixer (adjust the speed from low to high gradually) until stiff peak forms.
  • Bagi jadi 3 bagian dan beri warna/pasta jika suka.   Divide into 3 equal parts, give some food coloring/flavoring.
  • Taburi loyang atau nampan atau bahkan kotak makan dengan campuran gula halus & pati jagung (maizena). Tuang adonan marshmallow & ratakan. Biarkan di suhu ruang selama 1 jam, simpan di freeezer minimal 4 jam sampai benar-benar siap dipotong.    Dust a tray with confectioners sugar & cornstarch.  Pour marshmallow batter, spread evenly using a silicone spatula. Let rest at room temperature for at least an hour and then transfer it into the freezer and let rest for at least 4 hours until it's super firm and ready to be cut into smaller chunks or pieces.
  • Taburi permukaan marshmallow dengan maizena dan gula halus. Potong/gunting sesuai selera menggunakan gunting atau pisau yang sudah bertabur pati jagung (maizena).    Dust the surface with cornstarch & confectioners sugar, cut using a knife/scissors that has been dipped into cornstarch.


Marshmallows yang sudah jadi bisa disimpan di wadah kedap di dalam freezer, tenang saja, tidak akan beku.    You can keep the Marshmallows in an airtight container in the freezer, it won't get hard as ice cubes or anything, it'll be chewy just like how it's supposed to be.
