Fusion! When an Indonesian traditional snack recipe meets one of the most famous American cookies! Please welcome these sweet-savory, moist and fluffy Apem Oreo (Steam-baked Oreo Rice Flour Bun).
I didn't really plan to make them but since my toddler nephew grabbed the "wrong" oreos and didn't like the cream flavor, so I had to do something with the "unwanted" oreos.

apem recipe before and this one is actually just slightly different from that one because I added crushed coconut flavored oreos and a little bit of baking powder in the batter (the result was unexpectedly yummier).
Apem Oreo

Ingredients:
- 1 1/2 C (160gr) rice flour
- 1/2 C (60-70gr) cake flour
- 8 oreos, crushed (I use the coconut flavor)
- I/2 C (110gr) caster sugar
- 2 tsp instant dry yeast
- 1/2 tsp salt
- 1/2 tsp baking powder
- 3/4 C (180ml) thick coconut milk/ccoconut cream
- 3/4 C lukewarm water
Instructions:
- Mix all dry ingredients except baking powder, set aside.
- Mix coconut milk and water, pour into dry ingredients, stir until well blended. Let rest covered with cling wrap for 45 minutes until rising.
- Stir a little bit and add baking powder, stir again until well blended.
- Pour into greased molds/muffin tins. Steam over medium heat for 20 minutes. Best served warm with a cup of coffee.
